Trobar's Chef Residency Program – has anyone been this season?

View Mallorca just published an interview with Dolli Taylor about Trobar’s new chef residency program for 2026. Instead of one permanent chef, they’re bringing in guest chefs from around the world for 2-4 week stints.

The concept sounds brilliant – the chefs stay on the Trobar farm, pick fresh ingredients daily, and create their own menus. Each residency is a completely different experience. They’ve had Italian, Austrian, German, Polish and Spanish chefs so far.

What I love is how they use handmade ceramics from artists around the world for all the dishware – the chefs actually design their plating around the individual pieces. Plus the rooftop cocktail bar uses herbs and botanicals grown on their own farm.

The next residents are Jacint Carafí Sáez and Gerard Blanco from Barcelona. Anyone planning to go? Would love to coordinate a community dinner there!

We went during the Marle Rudolph residency and it was incredible. The zucchini salad with ingredients straight from their farm was so simple but so perfect. You could taste the freshness.

The rooftop is the place to be for pre-dinner drinks. Their cocktails with farm-grown herbs are creative without being gimmicky. The fig leaf discovery she mentions in the interview – that coconut aroma from toasted fig leaves – we actually had a dish that used that technique and it was mind-blowing.

Highly recommend booking well in advance. The residency format means word gets out fast and tables fill up.

Count me in for a community dinner! The Barcelona chefs (Jacint and Gerard) sound like they’ll bring something special with the Mediterranean focus.

I love the concept of a chef residency – it gives chefs creative freedom and keeps the restaurant fresh. This is the kind of innovative dining that puts Mallorca on the culinary map beyond the traditional paella and sobrassada reputation.
